Shrimp/Prawn Jambalaya (Indian Style)

Hello !!! hope everybody doing well, posting an interesting recipe. It's an Mexican dish   , where i have did little changes to suit our Indian taste buds :) it is a really colorful rice u can stuff this rice into a tortilla roll it up for lunch. I fried the Indian papads kept the rice on top of it and enjoyed it. Tasted amazingly, its a juicy and yummy rice which blends the sweetness of corn, spices and prawn, happy cooking .



Preparation Time : 20 mins
Cooking Time : 15 - 20 mins
Serves : 2 nos


Ingredients :

Basmati Rice - 1 cup
Shrimp / Prawn - 12 no
corn - 1/2 cup
Cut green capsicum - 1/2 cup
Cut red capsicum - 1/2 cup
Cut spring Onions - 1/2 cup
Butter - 1 tsp
Minced garlic and ginger - 1 tsp
Dry chilli - 2 nos
Cut onion into rings - 1 handful
Black pepper powder - 1 tsp
Tomato Ketchup - 2 tsp
Cut Tomato - 1 cup
Cut green chilli - 1 tsp
Chili paste - 1 tsp [prepare at home by boiling the red dry chilli grind them and saute the grind paste in oil ]
Cut coriander leaves / cilantro - 1 handful
oil - 1 tsp
Salt




Method:

Step 1: Cook the basmati rice with 1 tsp of oil and salt, keep it aside, wash the prawn cut all the veggies keep it aside.













Step 2: In pan add butter , dry red chilli, cut garlic,cut onion rings, green chili, chilli paste, corn and Shrimp, saute till the shrimp cooks well.


 

Step 3: Add the green capsicum,red capsicum ,tomato,tomato ketchup and cilantro allow it to cook , now add the cooked rice ,spring onion,black pepper powder and needed salt. Toss well for 5 minutes .


 


Your Shrimp Jambalaya is ready now. Enjoy.!!!
