I would say this recipe is a time saving and tasty recipe. I personally love this recipe because it is a vegetable delight. Chayote/chow-chow is good in dietary fiber , helps weight loss and provides essential vitamins like vitamin C. Other than chayote you can use bottle gourd, ribbed gourd for this recipe.Ingredients:
Mixed Vegetable (chayote/chow-chow,carrot,green beans,potato,radish)
Green Chili - 3 - 5 nos
Garlic Cloves peeled - 4 nos
Tomato - 1 no
Toor Dal - 1/2 cup
Turmeric Powder
Jeera Seeds - 1/2 tsp
Salt

For Seasoning:
Oil
Urad dal
Mustard Seeds

Method:
Step 1: In pressure cooker add the mixed vegetables, garlic cloves, green chili, tomato, toor dal, turmeric powder, salt, jeera seeds and needed water wait for whistles. I used to wait for 6 - 8 whistles.
Note : The veggie's expel water while cooking so don't add excess of water the curry may go watery.

Step 2: Once the vegetables are cooked well, in a small pan add the oil, mustard seeds, urad dal, jeera seeds, cut onion and asafoetida. Allow it to splutter. Pour it on the cooked vegetables and garnish with coriander leaves.

Serve with hot chapati or parata
